I am guessing you mean races like human, elves, ect...

Devilman - Human and Human/Devil hybreds Vs Devils, then in a later series Humans Devils and Human/Devil hybreds Vs Angels

Mazinger Z - Humans Vs the dead, then Humans and the dead Vs God like entities

Getter Robo - starts off as humans vs lizard me, the original inhabitants of the earth, then changes as the series goes on

Mahou Shoujo of the end - Humans Vs creepy Magical Girls, and creepy like those horror movies with those dolls, do not read if you are easly disturbed

Legend of Zelda Ocarina of time manga - well, it has a full on war with several races against each other at some point

Parasyte - Humans Vs Alien Parasytes
