I think you made a mistake.
Demon King is really the last boss (Once he dies, the demon castle will really disappear)
Princess is Extra Boss or Hidden Boss (If you every play any RPG, you will know it. The last boss is always in margin to defeat. Pruducer make Extra Boss or Hidden Boss for people who like challenge)
I remember that I can kill the last boss without any training/grind EXP, just simple go with story mode and I have enough level / items / equipment to kill the last boss.
I can only kill Extra Boss / Hidden Boss when I play 2nd playthrough with everything from 1st playthrough.

when the real punchline of the chapter isn't some big joke but that one panel with all the demons thoughts. this chapter was super cute
