I wouldn't be surprised if Jimbie refuses, but Oda set up the story really well if Jimbie joins. It makes sense, but the fact that princess Princess Shirahoshi has the power to destroy the world means Oda is preparing to use her later on in the story. Maybe as a support character.

She's probably too weak to join the crew atm even if she can speak to the sea kings.

Nah, I believe Jimbei will accept Luffy's proposal. He'll probably oppose at first, but the king might tell him to go if he wishes to or something like that. I'll believe he'll be easier to convince than Franky was though.

Noooooo, Jimbei better not join!! I'll be so sad to see him join! He's got the worst personality and looks out of all the candidates. So disappointed!!!! Never been so disappointed in Oda since his decision to go to Impel Down. I know Jimbei can fight and is the most useful, but still! Arghhhh!!
