Can anyone recommend me a rural slice of life anime? I have trouble finding any, and I think they are

so relaxing and comforting to watch.

Spice & Wolf. There are 2 seasons, based on a light novel.

Unfortunetly, anime was canceled, but it ends quite well :) If you want to know more, you'll have to read the light novels :D Which are great.

I HIGHLY RECOMMEND SPICE & WOLF!

Hanasuka no Iroha:

Slice of Life Shoujo with a little bit of romance, 24 episodes or 25 + movie.

Nagi no Asukara:

If you want a 24 episode long ongoing one. 12 episodes already out and its rural slice of life esque with some fantasy. A pretty deep one with some romance going on.

Myself:Yourself:

Old one with 12-13 episodes, I thought it was quite boring but it had some good moments.

H2O Footprints in the sand:

More of a rural drama in the later episodes but has slice of life moments.

Hoshizora e Kakeru Hashi:

Bit boring tbh but it's relaxing.Kind of a typical harem, but with an actual decision of the male MC at the end, which is quite sweet.

If i remember more I will EDIT it here, for now I hope you will find something form my list.^^

Chikyuu Shoujo Arjuna - not exactly slice of life, but nature-oriented
Gin no Saji
Haibane Renmei
Kino no Tabi ? Parts of it take place in rural settings.
Kokoro Toshokan
Mahou Tsukai ni Taisetsu na Koto
Mokke
Natsume Yuujinchou
Nitaboh
Sketchbook: Full Color's - don't remember whether the school itself is in a small town or in a city.
Tanoshii Muumin Ikka xD
Yokohama Kaidashi Kikou - great slice of life

Probably not the kind of rural you want / not slice-of-life:
Bounen no Xamdou - adventure; has slice-of-life moments; beautiful scenery
Ghost Hound
Kita e.: DDD - I think there was something rural in it, but it's been ages since I watched it
Mushishi
Natsu no Arashi! - comedy
Onegai Teacher - romance; small town
Zettai Shounen

nuuu, I missed the slice of life part; *cleaning the list* done

ABSOLUTELY watch Non Non Biyori!

Fulfills both rural (super rural) and slice of life.

Has much Loli Characters in it (it's basically only lolis and super cute ones) and is super relaxing, heartwarming and I love the characters. Also super funny and random at times.

I think this is just what you are looking for. Also it is airing at the moment, so you can't watch something more recent in that direction =).
