Your hair's greasiness doesn't increase because your hair follicles adapt to the more frequent washings. They only react to the warm water and the mechanical stimulation of the scalp that increase the bloodflow, leading to a higher production of sebum.

Unless you harm your existing hair follicles (e.g. by getting a perm), and your body has to replace them with other kinds of cells, or unless your hormone status changes, your hair will only react to short-term stimuli and retain its original characteristics.

Those that regularly donate blood can confirm that donating it more frequently won't make you recover faster; you just get used to the side effects of losing half a litre.

Besides, it's a lot more difficult to manipulate bone marrow, which is responsible for blood production, than hair follicles. You'd have to use hormones, drugs or radiation to affect it directly, all of which would work at the expense of other bodily functions and/or of your blood's quality.

If your bone marrow has a "normal" genetic setup and if you get the right nutrition, your blood cells need a fixed time span to develop and mature. Otherwise, your body would produce more of them, but less functioning ones. This is what happens to patients with anaemia or leukaemia among others.

Somehow it feels like Gyeom just calls it a 'disease' for convenience sake...or the author is calling it that for now. Doesn't feel quite right if it was a legit disease...at least for this series.

Well, it's still fiction. The mangaka probably only needed a reason for the main leads to stick together.
In reality, the person in question wouldn't be able to give blood everyday as it takes a while to produce it. The excess blood is usually drained over the span of a few weeks, and the patient will be fine for the following few months until they have to come again for another round.

Several rare diseases require blood-letting as a treatment, even nowadays. Most of them are related to a worrisome change in the blood's characteristics that cannot be sufficiently treated otherwise. For example, this can be an excess of iron, which disturbs certain metabolic processes, or too many red blood cells, which make the blood too thick.
