I have to disagree with you there, pal. That's exactly why they did it, just consider the otaku population for a while.
Both Tskuhime and Fate have great stories, good enough to be released without any sort of sexual content. However, do you really believe those perverts would buy these games for the story only?
We are talking about people who prefer to date their own smartphones, and, who allowed for a heavily ecchi-based story like DxD to reach it's third anime adaptation, while many infinitely superior works out there(Denyuuden, for example), had an incomplete one adaptation.

To make it clear, they didn't change Saber's gender so you could fuck her, if they just wanted to add in sex scenes, they could had just made Ayaka x Male Saber scenes. The reason why the changed Saber's gender had more to do with Shirou. They felt it would be more appealing to the audience if the point of view character was male and male Saber would had been too experience and knowledgeable about what's going on to be good for the role.
This is an anthology manga. Each chapter is a different artist and it is it's own thing.

Fate/Prototype is early concepts of Fate/Stay Night. Saber is original a male like historical King Arthur before change to female for hentai purpose.

This manga was released 2 years ago, and a few months ago an LN series (Sougin no Fragments) was released.
Well as far as I know that's correct, they released a fake trailer for fate prototype a few years ago and to my knowledge that is all that was all that was ever done with it.
Not sure if I'm correct, but I guess its the original Fate Stay Night that Type Moon had planned. I read that Type Moon had actually wanted a male Saber and a female protag for the LN but had to change to suit the audience which consisted of mainly males.
Since this is my first translation, any feedback would be appreciated. Thanks
